A lot of mtbrs also seem to be real foodies. One of the (many) great things about mountain biking is with all that riding, you can eat guilt free! :)
It is tomato time & I've been going out to the garden in the evening and picking a couple of tomatoes and making myself tomato & cheese sandwiches for dinner.
A mild bread, a schmear of mayo, thick slices of tomato & cheese = heaven.
Also good is mozzarella & tomato salad w/basil & a drizzel of olive oil. mmmm.
I use to have quite the garden, but since taking up mtbing, the evenings I use to spend tending the garden are taken up with biking. :rolleyes: But I still plant a few string beans, cukes, herbs & tomatoes.
Any other summer favorites?

Our garden is exploding this year.
My favorite, is also Tomatoes mozzarella & basil...just describing it makes my mouth water.
Thick sliced chilled tomatoes, a bumper crop right now...
Fresh mozzarella (trader joes)
Ex Virgin Olive Oil
Topped with Fresh Basil (another bumper crop)
Enjoyed with a tall glass of chilled sun-tea (trader joes again)
with a few sprigs of fresh mint (from the garden)
One of my all time summer favorites...

Funny I've been telling my wife I could eat tomatoes, mozzarella and basil every night.
We also put cukes and scallions in with ours. Yummmmmmy!!

Keeping with the mozzarella, tomato & basil theme.... dinner, mmmmm.
Tomatoes & basil from the garden, dough from a local pizza place & fresh mozz.

being from maine, I boil pine cones. you can broil them
or use the george foreman too. it's utter hell but you
get used to it (they say...but I still ain't used to it)

Try putting a little home grown basil on them! it'll help make them a little more palatable.

Being from MA, with po parents, we used to smear peanut butter on our pine cones, dip them in bird seed and tie them on a tree in the winter so the po birds would have eats...The squirrels never noticed.

Two more favorites, just made them this weekend. (we have more cukes and tomatoes then we know what to do with)
Garden Salsa: 4-5 fresh tomatoes chopped finely, a bunch of chopped cilantro, 1/2 onion chopped, 1 clove garlic, chopped, 1/4 to 1/2 red pepper finely chopped, one hot pepper chopped (if desired), salt & a dash of apple cider vinegar. Enjoy with our favorite tortilla chips.
Dill Pickles: Make a brine with 1/2C kosher salt, 1/2C white vinegar & 1.25 gallons water & bring it to a boil. Pour it over 12 to 18 cukes that have been cut into spears & arranged in a large bowl with fresh sprigs of dill, 1 -2 tsp pickling spices, 1/4 tsp dill seed and a couple cloves of garlic smashed.
Let sit on counter for 1-2 days, then refrigerate. These last in the fridge for months. Yum. (recipe taken from The Victory Garden Cookbook)

Made that last night.....Excellent!
We ended up spooning the salsa onto the fresh crusty we had with dinner it was so good.

The tomatoes & cukes are done, but the peaches are ripe.
It was a bumper crop this year!
Right off the tree, they are so sweet you wouldn't believe it. I've been eating 2 a day, and made peach pie, and made jam, and sill have leftover.
They're from a tree that grew out of a pit I tossed into the compost.

The Mackinaw peaches Jerry (http://www.youtube.com/watch?v=1tw4ZkdR6sw)... Were just harvesting our "second crop" of raspberries in the garden. The second crop usually bears bigger fruit.... had some for dessert with some Stoneyfield vanilla yogurt...mmmm

Ohhhh, so true! so true!
I have been riding the road bike a lot, but even that seems to involve food! :mad:
