For nostalgia, the spaghetti westerns rule with For A Few Dollars More taking the cake.
More recent rockers having nothing to do with the Clintster would include in no particular order, The Patriot, The Last of the Mohegans, and Gladiator.

Goodfellas
Godfather I & II
All of the rest pale in comparison.
Worth mentioning: Showgirls. Try and watch this one with your wife/girlfriend.

I'll certainly accept Braveheart. Too bad we don't have a glaring historical pic presenting the 'other' holocaust from the other side of the Irish Sea. There's a ton of folks who'd love to give one to John Bull, Oliver Cromwell, and the rest of British Empire.

It's not an "ultimate guy" movie but I could watch it over and over again and I'm feeling pretty secure with my masculinity today so here goes:
The Princess Bride...great movie, cracks me up.
Anything from clint too , especially the Outlaw Josey Wales and Dirty Harry.
"Are you gonna pull those pistols or whistle dixie?"
"I know what you're thinkin, did I fire 6 shots or only 5...?"
Classic.

Awright from I think it was a few dollars more....
To town undertaker: " Get four coffins ready"
To five bad guys:
" You guys upset my mule, but if you go ahead and apologize I am sure he will feel better."
To town undertaker:"Sorry about that make it five coffins"
Now that is acting!

I'll certainly third Braveheart. Great flick. Generally too graphically violent for most women. Which leads me right into pretty much every Quentin Tarantino movie to date. So far, I am hearing two opposing opinions from his newest "Kill Bill". Can you guess which gender is not taking well to this picture?
Somebody mentioned Princess Bride... good movie but I know several women who like it as well, so probably doesn't quite fall into "guy movie" category. Perhaps, in the same vein of that movie, though, Python's "Search For The Holy Grail" is more apropos for the "guy" category. Maybe not.
And lest any of us ever feel guilty for enjoying those brainless guy movies with all of that gratuitous violence and/or nudity, remember this... for every such guy movie there is a sappy chick flick. Now how many of you manly men get snookered into tolerating one of those more often than you would like. With all of the big movies that are out or coming out this season (Kill Bill, Matrix III, Lord... Rings III, et. al), wouldn't you know that my girl wants to go see some silly romantic comedy (aren't they all?) that I have never heard of. I am presently weighing my options... bad chick flick, sex, bad chick flick, sex...

If my wife wants to see a chick flick ,I tell her to call her sister..lol Another good way to find out if a movie quailifys is if its on tbs 6 times in one day..lol
Brave heart is in the top 10 for sure. Saving private Ryan also. Kill Bill was excellent, but it leaves you hanging big time. till part 2 of course. I wasn't to impressed with Matrix 2.
